Panaderia de Paa – a tradition of pan in Jaro

Pan de Sal is an important component of every traditional Filipino breakfast. Sa mga taga Jaro (for the people living in Jaro District of Iloilo City), Panaderia de Paa comes to mind. Previously known as Jaro Bakery, this unassuming bake shop has served pan de sal and other bread products for many generations. The pan de sal in Panaderia de Paa is described by its patrons as crusty on the outside and soft on the inside and only costs two pesos.

The owners of Panaderia de Paa attest that the fresh and full flavored taste of their pan de sal is a result of baking using traditional methods. Until now, they still bake their bread on the firewood fueled brick oven used when the bake shop first opened in 1896, that’s over a century ago! Aside from serving pan de sal, Panaderia de Paa is now also a fast food restaurant and a pasalubog shop selling biscocho, sweet and toasted breads, and biscuits. If you’re interested to drop by their store, they are located in corner Washington and Lopez Jaena Streets, Jaro near the Jaro District Plaza. It was founded by (and recently renamed after) Chiquito Uy Paa, a native of Fujian, Province of China.

    WOW! Another blast of history and food. I didn’t know that Paa’s dates back in the late 1800’s or did I? I just can’t imagine eating a century-old recipe of pan de sal! Come to think, some food recipes that just evolved recently and compare it with Paa’s… no contest here. Truly amazing! It stood the test of time. A well-researched material, Marcos. GREAT JOB!

      I was also shocked when they took me to the back of their store and saw the two old ovens that they use. Actually, I just went along with a friend who was doing an article for a school paper. Thanks to her, I was able to make a feature about Panaderia de Paa.

    Pan De sal Is a very special food for me, even outside iloilo like manila, but wala sang makatupong sang sa iloilo nga taste, i love it, its very simple but very tasty, whaaa i miss it you know daw ga laway ko bah, hehehe, anayway soon maayawan gid ko kaun pan de sal, we’ll try ang dira nga branch man be, and pande leche pa gid ang gina lawayan ko man , ang tinapay bala nga daw ginalubid, may calamay w/ ube kis-a bala haw , anu na na gani ngalan nya ?, baw ahhh lipat na gid ko, baw wahhhh only in philipines,

    naku, flashback ako. . . sang una gamay pa ko, kada hapon (3pm) ako ang ginapabakal sang tatay ko kay paa. pandesal kag butter. . . pag-abot sa balay, mainit init pa ang pandesal, slice dayon sang butter kag ipalaman sa pandesal. . . namit gid. . . haaayyyzzzz. . . san-o liwat man? :-)

    sayang dinimolish yung old bakery at pinalitan ng bagong building.. hay maganda pa naman sana yung old structure. one of a kind
